The vineyards of Ollon and Bex

In the coolness of wine cellars

The vineyards of Ollon and Bex are located on hillsides facing due south.

The savoir-faire of our vintners in cultivating vines in terrains that are often steep, makes the Chablais wines unique, creating grape varieties with a fruity and authentic aroma.

In the heat of a summer day, you can set off and discover the best of what the soil and hard work can offer you: tasting wine in the coolness of a passionate winemaker’s cellar.
Winemakers and their know-how

Winemakers and their know-how

Every year the grapevines are pruned back before they blossom, and their fruits ripen during summer.
Then it’s time to harvest the grapes. Each grape gets carefully cut, sorted and mashed.
Alcoholic fermentation converts sugar into alcohol. During maceration, the vine receives its colour, the intensity of which depends on duration. Decantation is the process of separating liquids from solids. The wine then goes through a second fermentation to reduce its total acidity. The ageing wine is usually stored in barrels for several months before being bottled.

Each harvest is different, leading to a wine that bears the marks of its time.
