EXPLORING BY E-BIKE

THE ALPINE MEADOW OF COL DE LA CROIX

How about setting off on an e-bike ride to discover the local products of the region?

Make no mistake, from the plain and the hillsides covered in vines to the green meadows, the unique savoir-faire of people brings out the best of the raw materials produced here.

In the course of your trip, you will find out about the production of L’Etivaz AOP cheese, which has been awarded the “protected origin” label, based on the precise production specification. This is produced in the alpine pastures from June to October, and the milk is cooked over a wood fire in a copper kettle. This is true savoir-faire waiting to be discovered in the alpine meadow of Col de la Croix, midway between Villars and Les Diablerets.

Gourmets will not be disappointed: when visiting the cheese dairy, you can also taste this fruity cheese and products made on the farm at a breakfast time, with 100% local ingredients.

L’ETIVAZ AOP

L’Etivaz AOP is a hard cheese from the alpine pastures, which is made in the craft tradition between May and October. It is based on precise and rigorous specifications.
The milk produced by the cows is rich and floral thanks to the variety of herbs growing in the alpine pastures, which are located at an altitude of between 1,000 and 2,000 metres.
It is made directly in the alpine pastures using the raw milk of the day. The milk is heated on a wood fire in copper kettles. The maturing process brings out the rich and fruity aromas.
Every year, around 19,000 units of L’Etivaz AOP are produced in all the alpine pastures.
